Due to popular demand (okay it was just Pippa Jay, but this woman needs Brownies!) here is the slightly fudged (lol!) recipe for the Brownies. Happy baking 🙂
Chocolate Fudge Brownies
- 100 g/4 oz plain chocolate drops
- 2 large eggs
- 125 g/5 oz butter (softened)
- 1/2 teaspoon vanilla essence
- 50 g/2 oz self-raising flour
- 25 g/1 oz plain flour
- 2 tablespoons cocoa powder
- 100 g/4 oz walnuts or pecans (chopped)
A 20cm/8″ square cake tin
Heat oven to gas mark 4/180 c. Grease and line the tin with baking parchment. Heat approx 2″ of water in a pan. Remove it from the heat and put the chocolate drops in a heatproof bowl and put this inside the pan. Stir until all the chocolate is melted.
Beat the eggs. In a large mixing bowl beat the butter, sugar and vanilla until fluffy. Add the eggs a little at a time, beating the mixture inbetween.
Sift the flour and cocoa powder into the bowl and add the melted chocolate and mix well together.
Add your chopped nuts. I used walnuts and only about 50 g/2 oz as I thought 100 g/4 oz looked like too much once it was all chopped up.
Spoon the Brownie mixture into your tin, smoothing with the back of a spoon. Cook for 35 minutes. The top will have a slight crust, but they will be gooey in the middle. Leave them in the tin for about 20 minutes and then cut into big fat squares. This recipe should make 9 brownies.
